Blue Man-Go!

Today I thought I would share a recipe that your whole family will love and is super easy to make!
"The Blue Mango!"
4 Ingredients:
1lb frozen Mango Chunks (dice 'em fresh and freeze or just buy a frozen bag)
1/2 Cup + a little unsweetened vanilla flavored Almond Milk
2 fist pumps (2tsp) Light Agave Necter
1/2 cup Fresh Blue Berries for the top
Thaw the frozen mango chunks for a few minutes, just to soften them up. If you do not have a good blender, go get one. Put all of the ingredients, except the blue berries, into a blender and blend that stuff smooth. You will have to stop and stir many times to get it to go and you may need to add a Tblsp. more of Almond Milk. If you like it a little sweeter, then add more Agave Nector. It is a low glycemic sweetener with great taste. Work it out and blend it thick!
Serve in small glasses and finally top them with Fresh Blueberries.
Serves about 2 adults and 3 small children
So there you have it. An easy snack for you and/or the kids during the summer. Loaded with vitamins, antioxidants, no refined sugars, dairy free, gluten free and soy free! Go Blue Man, Go! You could even top it with a dairy free whipped topping that I'll show you another time. That's it. I will leave you with a quote from Benjamin Franklin, "One should eat to live not live to eat."
